For vegetables, snails, fish and fish soups.
  • 8 garlic cloves, crushed
  • 2 egg yolks
  • pinch of salt
  • 1¼ cup oil
  • lemon juice
  • warm water
  1. All ingredients must be at room temperature.
  2. Add 2 egg yolks and a pinch of salt to crushed garlic cloves.
  3. Beat with wire whisk or electric beaters while slowly adding oil, bit by bit.
  4. At the end add a little bit of lemon juice and warm water
