Beurre de Homard ou de Langouste/Lobster or Rock Lobster Butter

  • ¼ lb. lobster or rock lobster shells
  • extra shells for more flavor
  • ¼ lb. butter, melted
  • mirepoix - ½ carrot, ½ onion, 1 tbsp. butter
  • lobster coral
  1. Cook the lobster shells in a mirepoix of sautéed carrot, onion and butter.
  2. Pound or put through a blender the lobster shells, melted butter and lobster coral.
  3. Strain through a tamis.
