Glace/Basic Ice Cream

- 3 cups milk
- 8 egg yolks
- 1 cup sugar
- flavor: chocolate, coffee, praline, vanilla, etc.
- Scald the milk with the flavoring.
- In a bowl beat the yolks and the sugar.
- Pour the hot milk slowly into the yolks, beating constantly.
- Pour back the mixture in the saucepan and bring to a boil like a crème anglaise.
- Strain.
- Chill, then pour into an ice cream churner.
