Pour Poisson a la Grecque

- This quantity for 1 lb (450 gr.) fish after cleaning.
- ¾ cup olive oil
- 1 onion, very finely chopped
- ¾ cup dry white wine
- ¾ cup water
- juice of 1 lemon
- salt, pepper
- 1 garlic clove
- 10 whole coriander
- 1 green pepper, cut in julienne
- 1 bouquet garni made of parsley, fennel, bay leaf, thyme
- Sauté the onion until soft.
- Add the rest of the ingredients, bring to a boil and simmer 20 minutes.
