Roux Brun

Roux brun for béchamel sauce and veloutés.
  • 4 tbsp. butter
  • 4 tbsp. flour
  1. Melt 4 tbsp. butter in a saucepan and mix into it 4 tbsp. flour.
  2. Cook for 15 minutes until brown.
  3. Another method is to brown the flour in the oven very slowly until brown before mixing it into the butter.
