Sauce Beurre Blanc

  • 4 tbsp. shallots, finely chopped
  • 1 cup white vinegar
  • salt, white pepper
  • 1 cup (225 gr.) butter, en pomade (soft)
  1. Boil the vinegar with the shallots until reduced to 1 tablespoon.
  2. Add salt and pepper and the butter, bit by bit, beating constantly over the lowest fire.
