Sorbet/Basic Sherbet

  • 1½ lb. fruit
  • 2 cups water
  • ¾ cup sugar.
  1. For the fruit, strawberries for instance, make a simply syrup with 2 cups water and ¾ cup sugar.
  2. The amount of sugar varies with the acidity of the fruit.
  3. Cool before pouring into an ice cream churner.
  4. For a lighter sherbet add some Italian meringue before churning.
