Tomato sauce
Ingredients
- 2 tbsp. butter, oil or lard
- ⅛ lb. fat back
- ½ carrot
- ½ medium onion
- ½ bay leaf, some thyme
- 1 tbsp. flour
- salt, pepper
- 1 teaspoon sugar
- 2 garlic cloves, crushed (optional)
- 1½ lb. tomatoes or 1 large can
- ½ cup white stock or water
Instructions
- Make a mirepoix with the fat back, carrot, onion.
- Cook it slowly in the fat, stirring occasionally with a wooden spoon
- Add the flour, cook a few minutes, stirring.
- Add the tomatoes, stock, sugar, salt, pepper and the herbs and garlic.
- Simmer 1 hour.
- Use as is or strain.
