Sauce Tomato

Tomato sauce
Ingredients
  • 2 tbsp. butter, oil or lard
  • ⅛ lb. fat back
  • ½ carrot
  • ½ medium onion
  • ½ bay leaf, some thyme
  • 1 tbsp. flour
  • salt, pepper
  • 1 teaspoon sugar
  • 2 garlic cloves, crushed (optional)
  • 1½ lb. tomatoes or 1 large can
  • ½ cup white stock or water
Instructions
  1. Make a mirepoix with the fat back, carrot, onion.
  2. Cook it slowly in the fat, stirring occasionally with a wooden spoon
  3. Add the flour, cook a few minutes, stirring.
  4. Add the tomatoes, stock, sugar, salt, pepper and the herbs and garlic.
  5. Simmer 1 hour.
  6. Use as is or strain.
