Sauce Vin Rouge

To serve with eggs, meat and chicken.
Ingredients
- 1 medium onion, diced
- 1 small carrot, diced
- 1 tbsp. butter and 1 tbsp. oil
- 1 garlic clove, crushed
- 1 cup (2.5 dl.) red wine
- salt, pepper
- a pinch of sugar
- 1 cup espagnole sauce
- 2 tbsp. butter
Instructions
- Sauté the mirepoix in the oil and butter until soft.
- Add the garlic and the red wine.
- Season with salt, pepper and sugar.
- Reduce to ½ cup.
- Add the espagnole sauce.
- Cook 15 minutes.
- Strain through a chinois.
- Off the fire, add the butter.
