Sauce Vin Rouge

To serve with eggs, meat and chicken.
Ingredients
  • 1 medium onion, diced
  • 1 small carrot, diced
  • 1 tbsp. butter and 1 tbsp. oil
  • 1 garlic clove, crushed
  • 1 cup (2.5 dl.) red wine
  • salt, pepper
  • a pinch of sugar
  • 1 cup espagnole sauce
  • 2 tbsp. butter
Instructions
  1. Sauté the mirepoix in the oil and butter until soft.
  2. Add the garlic and the red wine.
  3. Season with salt, pepper and sugar.
  4. Reduce to ½ cup.
  5. Add the espagnole sauce.
  6. Cook 15 minutes.
  7. Strain through a chinois.
  8. Off the fire, add the butter.
