Mayonnaise Verte/Green Mayonnaise

For cold fish, particularly cold salmon.
Ingredients
  • 1 cup mayonnaise
  • 1 cup mixed spinach and watercress, cooked, drained and chopped finely
  • 2 tbsp. "fines herbes", parsley, chives, tarragon, chopped
Instructions
  1. Mix all ingredients into mayonnaise.
