Court-bouillon for fish
Ingredients
- 1 quart water (1 liter)
- 1 cup (2.5 dl) white wine
- or ½ cup vinegar
- or ¼ cup lemon juice
- Salt, pepper
- 1 carrot, thinly sliced
- 1 medium onion, stuck with 2 cloves
- 1 bouquet garni
Instructions
- Combine all the ingredients in a saucepan, bring to a boil, cover and simmer 20 minutes.
