Court-Bouillon pour Poisson

Court-bouillon for fish
Ingredients
  • 1 quart water (1 liter)
  • 1 cup (2.5 dl) white wine
  • or ½ cup vinegar
  • or ¼ cup lemon juice
  • Salt, pepper
  • 1 carrot, thinly sliced
  • 1 medium onion, stuck with 2 cloves
  • 1 bouquet garni
Instructions
  1. Combine all the ingredients in a saucepan, bring to a boil, cover and simmer 20 minutes.
