2. Pour Poisson à la Grecque - For marinated fish
Ingredients
  • This quantity for 1 lb (450 gr.) fish after cleaning.
  • ¾ cup olive oil
  • 1 onion, very finely chopped
  • ¾ cup dry white wine
  • ¾ cup water
  • juice of 1 lemon
  • salt, pepper
  • 1 garlic clove
  • 10 whole coriander
  • 1 green pepper, cut in julienne
  • 1 bouquet garni made of parsley, fennel, bay leaf, thyme
Instructions
  1. Sauté the onion until soft.
  2. Add the rest of the ingredients, bring to a boil and simmer 20 minutes.
