For Blanching
Ingredients
  • 1 quart water
  • 1 tbsp. flour
  • 1 tsp. salt
  • 1 onion stuck with a clove
  • 1 carrot, quartered
  • 1 bouquet garni
  • 2 tbsp. vinegar or juice of ½ lemon
Instructions
  1. Mix the flour with some cold water.
  2. Add the rest of the ingredients and bring to a boil.
  3. Simmer 30 minutes.
  4. Strain.
  5. Use according to recipe.
